About:Chinese Embassies and Consulates

I will be on a cruise with a 2-Liday port stop in Hong Kong, leaving ship in HK for airport...

..for departure back to Toronto with a stopover in Beijing. Will I need any pre arrival visas for HK and for stopover in Beijing?

No, you don't need apply for HK or Beijing. You enjoy 90 days visa free period and enjoy 72 hours free transit in Beijing.
