About:Chinese Consulate in Melbourne

I may be teaching in Kaifeng for 8 months in 2014.

I am unable to provide exact dates until the management team from Yellow River Conservancy Technical Institute visit Australia some time in December 2013. My concern is that the academic year at YRCTI starts late Jan early Feb and I don't want to leave things too late in the year before Christams Holidays.

Am I able to apply for a visa with estimated dates of departure from Aust and return from China?

Yes, estinated dates of departure is ok for application because the visa can be valid for 3 months from issue date. That is to say, you can enter any day before it expires. But for application itself, the work permit, invitation letter from the institute are required.
