About:Hong Kong International Airport

do the shop open 24 hours at terminal 1 and 2 HKIA? The shops are also same from departure and arrival gate?

No, they are not.
Some of the shops will close at around 21:00, while some are at 23:00.
The shops in different terminals have different operation hours. I think you will find the detail shops names and their operation time on the official websites of HKIA.
