i fly into guangzhou on the evening of the 25th and fly out early in the morning on the 29th, about 80 hours later.

is it possible for me to stay in the airport hotel for one night and then pass through immigration when it is less than 72 hours until i depart or is it better to just pass through immigration

No, you cannot. As I know, the 72h free-visa duration starts from the time of your landing.

No, but I am afraid your carrier airline will refuse your boarding if you have a ticket showing flight schedule with a 80-hour stopover. So, you are suggested to apply for a transit visa in advance.
