I think China Merchants Hotel is a nice one.
From Xiamen Tourism Ferry Terminal, you can find direct ferry to reach Zhangzhou Port. The ferry operates from 06:30 to 11:30. The ferry stops at Zhangzhou Passenger Port and you can see the China Merchant Hotel after you get out of the port.2
