I'm visiting Longkou (just up the coast form Yantai) next week. Can you recommend any local attractions / activities?

Just been reading the news about the Fukishima nuclear power plant leaking highly radioactive water into the sea.

Is the water near to YT safe to swim and seafood safe to eat?

Has there been any reports in the Chinese media about possible contamination into Chinese waters?

According to the report, it has no effect on China water, so it should be safe to swim and have seafood there. Anyway, news is updating. You'd better check that before your departure or upon your arrival again.
