timescale of visa application

I am going on a travel holiday from 2nd January 2014 Uk to Australia and picking up cruise ship in Brisbane 4th March and will call in to China x 3 ports and Hong Kong end March/April. How will I get one that will be valid before I leave UK on Jan 2nd.
