I am afraid not, because the ticket is not from Ho Chi Minh to Tokyo with stopover via Shanghai airport. You can apply for extension of stay at Shanghai PSB for your leaving flight.

It is possible now, but I heard that HK will not issue visas to non-residents anymore from July 1st, 2013. So, you'd better contact a travel agency for the latest information.
