What is the best transport option (cheapest and convenient) for 2 adults and 1 child from HKIA to Mandarin Oriental in Central HK?

Well, I suggest you take bus no. E11 to Jardine House, Connaught Road Central. Then you can walk to your hotel within a few minutes.
