Hi, how do we apply for a visa when we are there? Should we apply beforehand at the Chinese Embassy in Australia? I will be going with my wife to Hong Kong in August 2014 for 4 days, but she is on a Fiji passport.

Nope, you needn't apply in advance. You can get it ready when you pass the immigration channel. It's very easy.
