can we rent taxi from Guangzhou to Hongkong air port at 5 in the morning and what are the charges?

I'm afraid it is a little hard to catch a taxi for this journey that early. For convenience, you can rent a car in advance and in the early morning, it can pick you up and then take you to HKIA.
