The consulate in hristchurch doesn't accept application from non-New Zealanders. You have to submit your documents to the embassy in New Zealand. The documents you have to prepare include a valid passport with at least six months validy, a completed application form with a passport-size photo affixed on it and invitation letter.
If you can't offer invitation letter, you have to offer transportation ticket in China like air ticket or train ticket, accommodation reservation, detailed travel itinerary and proof of sufficient funds for the duration of stay, a minimum of USD $100 per day per person.
