Firstly, I have to tell you that Oct. will be crowded to travel because of Chinese National Day Holiday, so maybe Sep. can be better for you. Generally, Sep. is a good travel time for all the destinations you listed.
During that time, Beijing, Pingyao and Xian will become cooler, clear and brisk. The places will have an average temp of around 20C. Short and long-sleeved clothes need to be taken along. A coat and jeans for the morning and evening coolness can be also necessary.
Guilin and Yangshuo will be cool and sunny with occasional breezes. Though, the general average temp during Sep. is around 25C. Summer clothes and light coat can be ok.
Shanghai will be till hot in the early Sep. and it becomes cool little by little. At that time, it may also rain a little. All in all, summer clothes will still work in the early Sep. If you come in late September, you need to bring a coat and long trousers for temperature dips.
Huangshan will have the average temp of only 14C then. So it will be a little cool. You need take along overcoat and thick trousers. If you climb the mountain, thicker clothes are needed then.
