Well, your plan is doable. During the 3 days in HK, you can go to visit the Ocean Park, Stanley Market, the Peak, Madame Tussauds Museum, Victory Harbour , the avenue of Stars, and the Symphony of Lights on first day if possible. The next day, you can go to visit Ngong Ping 360 in the early morning, then go to Disneyland in the afternoon. The third day, you can go to visit Central, Causeway Bay, Aberdeen , Golden Bauhinia Square, and Repulse Bay.
For the day in Macau, you can go to visit Fisherman's Wharf, Venetian, the City of Dreams, Lisboa, Rains of St. Paul's. Senado Square, A-ma Temple, and Macau Tower.
On the day in Shenzhen, you should not miss the Window of the World, Splendid China, China Folk Cultural Village.

From Mirador Mansion to the attractions in HK, here are the general transport means:

To Ocean Park, at Tism Sha Tsui MTR Station, you can take Tsuen Wan Line to Admiralty Station, where you can transfer to bus no. 629 to the park directly.

To Stanley Market, you can walk to the nearby New World Centre, Salisbury Road to take bus no. 973 to Stanley Village, Stanley Village Road. Then you can walk to the market within 400m.

Madame Tussauds Museum is located the peak of Victoria Peak, so you can take Tsuen Wan line from where you are to Central Station. Walk to Garden Road, Central, and you can take the peak tram to the peak to view the scenery there as well as the museum.

To Victoria Bay and Abenue of Stars, you can just walk there. They are both not far away. In the afternoon, you can visit the two destinations and enjoy the Symphony of Lights at the Victoria Bay.

To Disneyland, you can take Tsuen Wan Line to Lai King and then transfer to Tung Chung Line to Sunny Bay Station. Upon your arrival, you can easily catch Disneyland Resort Line to the attraction.

After visiting the Disneyland, you can take the resort line to Sunny Bay. Then take Tung Chung Line to Tung Chung Station. After walking around 5min, you can meet the cable car which can take you view the Ngong Ping 360.
