Our planned trips-> DAY1: HKong Int'l Airport to HKong Station (then taxi to our hotel in Wan Chai) from Wan Chai to the Peak, from Peak to TST Promenade then back to Wan Chai;  DAY2: Wan Chai to Sheung Wan for Ferry to Macau and back again to Wan Chai; DAY3: Wan Chai to Tung Chung for Ngong Ping then back to Tung Chung to DisneyLand Resort to Tung Chung & back to Wan Chai; DAY4: (taxi from hotel in Wan Chai to) HKong Station to Int'l Airport?

As for your case, I suggest you buy the Airport Express Travel Pass. It is an Octopus Card with either one or two Airport Express single journey(s) as well as 3 consecutive days of unlimited travel on MTR, except Airport Express, East Rail Line First Class, Lo Wu and Lok Ma Chau stations.
