To enter Hong Kong with a US passport, you'll not need to do anything but fly to HK airport and enter the city. A wonderful & modern airport busy with people from all over the world.
To enter China (Shenzhen is a city in China) you will need to fill out an application HERE (in USA) and mail it into the Chinese consulate prior to departure. I usually allow at least two weeks for my passport to be returned. One month is smarter.
First, shop for the ticket you want to get you where you want to go and then when you fill out the Application you will be able to describe your travel plans.
Hopefully you will get at least a 'two entry' mandate. You want to get a multiple entry. Don't worry. You can create your plans around whatever they give you.
Once you are in Hong Kong relax and enjoy yourself. Sure you need to be on-guard when you travel but less so in Hong Kong. People are polite enough and you may be surprised to hear Chinese people speaking with a British accent. Get a guide book so that you make sure to see all of the sights. Take the ferry to the Kowloon side of the bay.
To go Shenzhen you will take a train to get to the border. Hong Kong is MUCH BIGGER than what you see in your mind's eye -- those really tall buildings on the water's edge.
As I recall, the train ride takes about forty minutes from downtown HK to the border with China. And it is a real border!! note: you will be given an entry form which you need to fill out and then hand over as you pass into Shenzhen.
Once you are in Shenzhen I will suggest a couple of things that I did when I was there.
One: Even if you do not NEED to go to the airport in Shenzhen consider jumping on an airport shuttle. Sit up & see Shenzhen!! (It blew my mind the first time I saw it)
Two: Visit a Starbucks to meet interesting foreigners who live and work in SZ.
There's one near the train station.
