You can walk to Mong Kok MTR Station to take subway Tsuen Wan Line to Central Station. Then you need walk to the nearby Garden Road to take the peak tram to the Victoria Peak.
Your hostel is very close to the Ladies Market, so you walk there easily.

Well, you can take Tusen Wan Line to Lai King Station first. Then you need trandfer to Tung Chung Line to Tung Chung Station, where it is near to Ngong Ping 360. After visting, you can go to Tung Chung Station again to take the subway to Sunny Bay Station. There you can easily catch the Disneyland Resort Line to the attraction directly.

The Night Market is near Yau Ma Tei, not far from Mong Kok.
The route above mentioned can be safe and to some degree, money-saving. So hope you are satisfied.
