Visa required for my trip to China including Hong Kong

If I were to go on a tour in China that included Hong Kong for 16 days and then went to Japan for 16 days before retuning to china for 2 days, then flight back to USA..would a double entry Visa allow me to do this as a tourist?

Yes, a double entry is enough as your itinerary listed above. please keep in mind that leaving for Hong Kong counts an exit from mainland China on your visa.
