Hi there. As I know, your hotwl in HK will be near Wan Chai, so my suggestion about your itinerary of HK is as follows:
D17th, You can go to Lautau Island and Ngong Ping 360 first. Then you can go to Disneyland to spend a happy time.
D18th, you can go to Tai Sin Temple, located at Kowloon. After that, you can wonder around to Tsim Sha Tsui In the afternoon, you can enjoy your nightlife by catching the bay cruise at Tsim Sha Tsui.
D19th, you can go to Causeway horse racing wed nite to enjoy yourself. And in the afternoon, the Lan Kwai Fong will be your taveling destination.
D20th, you can get up early to Yuen Long to taste the delicious sea food there and buy the famous Wife Cake. Then you need be back to your hotel to make preperation for leaving.
Good Luck then !

Dear Irene.
To be honest, Yuen Long is a little far from your hotel. But the wife cakes there are really very famous. As for the subway route, here is my suggestion:
Similarly, you need walk to Wa Chai MTR Station first. Then you can take subway Ialand Line to Central Station. You can walk from the Central Station to Hong Kong MTR Station to take Tung Chung Line and get off at Nam Cheong. After that, another transference is needed: you need take West Rail Line to Yuen Long directly.
