Itinerary for family of4 with 2 kids, staying for 4days,3nights at shamrock hotel

Dear Emily, about your 4 days & 3 nights HK trip, here is my syggestion:
Your hotel is located at Jordan Street and it is near TST and Avenue of Stars. So upon your first day arrival at HK, you can wander around to enjoy TST and Avenue of Stars.
On the second day, you can go to Ngong Ping 360 (Lantau Isaland), then visit and enjoy the Disneyland.
On the third day, you can take your kids to Ocean Park first. Then you can take a view at Victoria Peak. In the afternoon, you can descent from the peak to Victoria Bay to enjoy the show.
On the last day, you can go and visit the ten thousand Buddhas Temple.

Since your hotel is close to Jodan MTR Station, it is more convenient to take the transport.
From the hotel to TST and Avenue of Stars, you can just walk there very fast and have a good look at them.
From the hotel to Ngong Ping 360 (Lantau Isaland), at Jordan MTR Station, you can take the Tsuen Wan Line and get off at Lai King Station. Then you need transfer to Tung Chung Line to Tung Chung Station which is near Lantau Island. After visiting Lantau Island, you can take Tung Chung Line to Sunny Bay Station. Then the Disneyland Resort Line there can take you to the Disneyland directly.
From the hotel to Ocean Park, you can take Tsuen Wan Line to Admiralty station. There the bus no. 629 can take you to Ocean Park. Meanwhile, there are cable cars to Victoria peak at Admiralty Station.
From the hotel to ten Thousand Buddhas Temple, you can take bus no. 81 there. Or you can take a taxi, because it is only about 12-13 km from the hotel. To take a taxi may be convenient for kids.

Actually, you can walk to Jordan MTR Station from your hotel in only 1-2 min.
