If you will work in China, a single entry visa is enough, because you need to apply for a temporary residence permit after entry. With this permit, there is no limit for entries and stay duration.

I'm not planning to work permanently in China, I'll be travelling to China often on business trip. So wondering how long can I stay for each trip if I apply for a multiple-entry visa. I may need to stay more than 30 days for each visit, so wonder if the visa is good for staying more than 30 days per visit

The duration of each entry of a multiple visa can be 30, 60 or 90 days. If you are going to China for business, you should apply for F vsia.

Thanks! Can I request for the duration of each stay under the Multiple entry visa or is that determined by the visa officer at point of application? Would they take into account the fact that I would be there for 5 weeks each stay and grant me a longer stay per visit?

You can just fill your intended duration in the visa application form, but the visa officers will make a final decision on this according to the documents you provided.
