Tourist visa is ok, and it should be with entries as the ports you plan to visit in mainland China. If for Shanghai only, a single entry visa is enough.

Once again, you are not required visa to HK. If your ship will stop in Shanghai city only in mainland China, a single entry China tourist visa is enough.
