You need the following documents from your own country:
1. No Record of Marriage (Single Status)
2. Birth certificate
3. Passport
4. Notarised translations in Chinese of all originals not in Chinese (except the passport)

To remind you, you must complete the Application for Authentication of Notarisation at Chinese Consulate and submit it to them for authentication.

There are official translators who provide translation service in China. Your birth certificate and single status should be first notarized by an Australian Notary Public, then authenticated by the Department of Foreign Affairs and Trade (DFAT)Victoria or Tasmania State Office and its duplicate. Finally, you need to get them authenticated at Chinese consulate in melbourne.
On the day you get married in China, a translator is not necessary, at least your wife can help with all communication there.
