What visa will we need?

Hello, my wife and I will be going on a fly/cruise holiday to the far east in October. We spend 6 days in China then board a cruise ship. We then make additional one day stops at Shanghai and Hong Kong. Will we need a double entry visa or multiple entry.

You mean you will first enter China for 6 days, then board a cruise ship to leave the mainland, and then go back to the mainland for two stops (Shanghai and HongKong), right? If so, you need a double-entry visa. Entering HK does not count an entry.
