In order to get your marriage registered in China, you can apply for a tourist visa and go to the office in the jurisdiction in which your fiancee is registered on her hukou.
Documents needed are: Single Status Certificate, Birth certificate, your Passport. Prepare notarised translations in Chinese of all originals not in Chinese.
For tourist visa application itself, you need to submit your passport and copy of information page, photo and visa application form. Sometimes, you may be required by visa officers with return tickets, hotel reservation, or invitation letter from your fiancee with her ID and address. Sorry I am not sure about the visa fee.
