Transit and single entry or a multiple entry visa?

We are travelling to Amsterdam with an overnight stay in Guanghzou (arrive 6.00pm and fly out 10am the following morning) and on return, stay in Guanghzou (arrive 7.45pm on 2 July and depart for Brisbane 10.20pm on 4 July). Do I apply for a multiple entry visa or (2) a transit and single entry? Thank you.

Will you leave the airport during your first stop in Guangzhou (arrive 6.00pm and fly out 10am the following morning)?
