We are flying to Beijing, then on to Tiajin by bullet train for 2 days before joining a cruise ship.  We will be visiting Xiamen for 1 day.  What kind of Visa do we need?

You need a double entry tourist visa (L visa), the first entry for Beijing, Tianjin, once you join a cruise ship in Xingang of Tianjin, it means you exit China, for the visit Xiamen for 1 day, it is a new entry. The number of entry for cruise is decided by the number of calling ports within Mainland China.
