It would be great to tell me exactly what I need to do. I have one month left.

Australia passport holders can stay in Hong Kong for at most 90 days without a visa. Since you are only going to stay there for 7 days, you don't need to apply for a visa.

What does he go to Hong Kong for or what kind of visa does he need to apply for? Here is a list of requirements for Hong Kong business visit visa:
Forms and Documents to be Submitted by the Applicants
1. Application for Entry for Visit/Transit in Hong Kong (ID 1003A)
2. The applicant's recent photograph (affixed on page 1 of the application form ID 1003A)
3. Photocopy of the applicant's travel document containing personal particulars, date of issue, date of expiry and/or details of any re-entry visa held (if applicable)
4. Photocopy of proof of the applicant's financial standing, e.g. bank statements, savings accounts passbooks, tax receipts, etc.
5. Photocopy of proof of transportation arrangement, e.g. flight itinerary
6. Photocopy of proof of the proposed business visit to Hong Kong, e.g. letter issued by a trade body to confirm the applicant's attendance at trade fairs and exhibitions, etc. (for business visit only)
7. Other deemed necessary requirements by the embassy.

Forms and Documents to be Submitted by the Sponsor
(i) For application in which the sponsor is a Company:
1. Application for Entry for Visit/Transit (Sponsor) in Hong Kong (ID 1003B)
2. Photocopy of Business Registration Certificate

(ii) For application in which the sponsor is an Individual:
1. Application for Entry for Visit/Transit (Sponsor) in Hong Kong (ID 1003B)
2. Photocopy of the sponsor's Hong Kong identity card
3. Photocopy of the sponsor's travel document containing personal particulars, date of issue, date of expiry, and the latest arrival stamp/extension of stay label in the HKSAR (for non-permanent resident of the HKSAR only)

BTW, you should hurry up, or it usually takes 4 weeks to process a Hong Kong visa.

Hey, thx for that... I know all the requirements and have it all done. Its just a stopover for 7 days. We are going to Germany so he needs a tourist visa short stay... The only thing I dont understand. It says if you would like to apply for a Hong Kong Visa you can send the application form by post. And thats it? I tried to make an appointment online but I couldnt because its all booked out?! And then I found that an appointment is not necessary for Hong Kong applications.
Help meeee :))

Yes, an appointment is not necessary.
There are two ways to apply for Hong Kong visa:
1. apply through China embssy or consulate in your country;
2. post all the requirements directly to Hong Kong Immigration deprtment to obtain the visa. Add: Receipt and Despatch Unit, Immigration Department, 2/F, Immigration Tower, 7 Gloucester Road, Wan Chai, Hong Kong
Good luck :D

No, you don't need to send his passport to Hong Kong. The photocopy of the passport is OK.
The visa fee is HKD160. FYI: http://www.immd.gov.hk/ehtml/feetable_5_1.htm
I prefer to apply through China embassy, for I can know if the documents submitted are enough or not the first time.
Are you living in Sydeney? If so, you need to go to Consulate General in Sydeney to submit the documents, where there are fewer applicants. Because applicants for China visa need to go to CVASC to submit documents. And online appointment is not necessary in this case.
