Australian passport holders can stay in Hong kong for up to 90 days without a visa. So you don't need a visa to stop over in HK. Actually, you can even have a brief tour in HK city.

Nepal passport holders need a visa for transit at Hong Kong airport even if they don't leave the airport. However, no visa is required if provided they travel on Cathay Pacific or Dragon Air on both legs of the journey.
Please be advised that Hong Kong Immigration Department has announced the extension of the Airside Transit Without Visa arrangement to Nationals of Nepal provided that they are flying with CX and KA with connections in HKIA starting from the date Dragonair begins the services between Hong Kong and Kathmandu on 02 December 2007. Nepalese must hold valid visa, the maximum transit time should be within 12 hours and the arrival passengers will be accompanied by airline staff throughout the transit period at Hong Kong International Airport.
