Firstly, it is suggested that you rent the Octopus Card for each. From Hong Kong Airport, you could take bus A21 and get off at Sino Center, Nathan Road. Then, walk down along Nathan Road and turn to left to Dundas Street, at the end of which you will find the Waterloo Road where the Metropark Hotel-Kowloon is located. It will take you about 15 minutes on foot.

From the hotel, you could walk to Mong Kok metro station. By metro, you could get to other parts of Hong Kong easily.
1. Disneyland could be reached by metro
2. You could take metro from Mong Kok to Admiralty and then turn to bus 629 to Ocean Park
3. You could take metro to Admiralty and then take bus 26 to Man Mo Temple. From the temple, it is suggested that you take taxis to Victoria Peak. From Victoria Peak or hotel, you could transfer to Exchange Square of Central easily, where you could take bus 66, 6etc to get to Repulse Bay and Stanley Market, bus 70 to Aberdeen Fishing Village
Ps: one day is not enough for you to see these places.
4. You could take metro or bus down to Tsim Sha Tsui to watch the Symphony of Lights, or take the Victoria harbor cruise at the Star Ferry Terminal here.
5. You could take metro to Tung Chung station and then walk to take the Ngong Ping Cable Car to reach Po Lin Monastery and Ngong Ping Village. Then, you could transfer to Tai O by bus 21.
6. The Tempel Street could be reached on foot along the Nathan Road. The Sky 100 is close to Kowloon train station.
