Best location to stay in Hong Kong

Planning to visit Hong Kong in November. We are seniors 60 and long walking can be inconvenient.

1.Is there anyone to give me idea what is the best location to stay, that is close to shopping, dining etc and of course transportation.

2.How many days I need to be able to see majority of the interesting and historical places in Hong Kong?

3.Any recommendations for evening entertainment? Such as shows, that I can't see anywhere else?
Something that will keep us busy until 11 PM or so.

Thank you!

1. It is suggested that you stay at a comfortable hotel located in Tsim Sha Tsui area where you could find shopping, restaurants, sightseeiing and transportation easily.
2. It is suggested that you leave around 5 days for the trip. Better to select your interested places and make a proper itinerary
3. You may take a cruise on the Victoria harbour.
