I think you can get some practical help from the China Embassy or Consulate-General in you country. If you have preferred Chinese universities, you may also contact the university directly to apply for the admission. Almost all of the Chinese universities have their own official website. If you know the name of the university, you can go to the official website to get the general info. and even submit the application online through the offiical website directly.
