I am flying domestically with China Eastern into T1of Pudong airport at 0955 and need to transfer to T2 for an international flight that leaves at 1350, is this enough time to do the transfer between the two terminals? And what is the easiest and fastest way to get from T1 to T2?

Yes, the time is enough for you to make the tranfer. There is a passage connecting T1 and T2, you can walk a bit over 10 minutes from one to two. There are also free shuttle bus between two terminals, one every 10 minutes. It can take you to T2 in a few minutes.
