Does an open ticket exist?
I am traveling by train from Shanghai to Kashgar and return.
Do I need to purchase a ticket for each leg of the journey?

There are no such open tickets available for trains in China. From Shanghai to Kashgar, there are no direct trains operating. By train, you could take T52/T53 to Urumqi first and then to Kashgar by another train. Yes, you need to buy the tickets separately for each leg.
