You may take bus no. A21 from the airport to the hotel. I would like to arrange your itinerary as follows:
April 30: take metro tsuen wan line from TST to Admiralty to take bus no. 629 to visit Ocean park. Then take bus 629 back to to admiralty to take tsuen wan line back to TST to enjoy avenue of star and symphony of nights at around 20:00.
May 1: take tsuen wan line to Lai King, transfer to tung chung line to sunny bay, transfer to disneyland resort line to visit disneyland, vice versa. Then enjoy yourself at the temple street market at Yau Ma Tei at night.
May 2: take tsuen wan line to central, transfer to bus no. 15 to the peak, and then go back to central to do some shopping. After that go back to your hotel to check out and then head for the airport to leave HK.
