why do kites have dragon and lion pictures on kites?

I think because Dragon and lion are both symbols of the Chinese people.

Well if you keep seeing signs like these. (Seeing dragons and lions all the time.) Then that may be a sign to discover your spirit animal. Remember, you can have more than one spirit animal. We are always on our spirit animal journy.
