How do I take a train from Hong Kong to Guilin?

No direct trains are available from Hong Kong to Guilin. However, you could take a bus to Guangzhou first and then take the train K36/K37 or K952/K949 to Guilin. Or, you can reach Shenzhen first and then to Guilin by a train. It takes around 13hrs by train from Shenzhen to Guilin.
