Your itinerary is doable.
From the airport to the Ramada Hotel Kowloon, you can take bus A21 and get off at Granville Road, Chatham Road South. Then walk to the hotel.
From the hotel to the peak, you can take MTR from MTR Tsim Sha Tsui Station - B2 to Central Station - J3, then take bus 1 from Central to the peak.

From the hotel to the ocean Park, you can take MTR from Tsim Sha Tsui to Central, then take bus 6A or 6X to the Ocean Park. Half a day is enough to explore the Ocean Park.

The YMCA hotel is near to Yau Ma Tei Station, you can take MTR from Yau Ma Tei to Mongkok station, then walk to the Ladies market. When go to the Avenue of stars, you can take MTR from Yau Ma Tei to Tsim Sha Tsui, then walk there.

From YMAC to Novotel City Gate, you can take MTR from Yau Ma tei to Lai King, then transfer to Tung Chung Line to Tung Chung station, then walk to yje citygate. From the Citygate to Disneyland, you can take MTR from Tung Chung to Sunny Bay, then tale Disneyland Resort to get to the Disneyland.

Either tourist day pass or octopus card is OK for you. There is no discount for the ocean Park and Disneyland if you hold the octopus card, but it has 80% discount on the transports.
