It is a good idea to go to Disneyland and Ocean Park on weekday, but one day is not enough for these two. You can arrange Disneyland and Ngong Ping in one day. When you pass Tung Chung, visit the Citygate Outlets here. Harbor front Show, you mean the Symphony of Light. You can see it on the Avenue of Stars. From your hotel, you can walk to Avenue of Stars, Harbor front area. Take MTR from TST to Tung Chung, 15.5HKD. Then NGong Ping 360 cable to Ngong Ping. Back to Tung Chung and then shift to MTR to Disneyland vis Sunny Bay, 12.5HKD. MTR to Admiralty and then change to bus 629 to Oecan Park, totally 18.6HKD. To Victoria Peak, take MTR to Central, 8HKD. Then take bus 15 or peak tram.

You are welcome. It costs about 40 minutes on MTR to Disneyland, 30 minutes to Ocean park, about 40 minutes to Tung Chung and another 25 minutes by cacle to Ngong Ping. If you wait for the mtro or bus longer, it takes several more minutes.
