How long would it be, by train, to travel from Guangzhou to Xinjiang and the cost for a soft sleeper-round trip?

There seems no direct train from Guangzhou to Xinjiang. You can make a transfer to Xian. It totally costs about 40 hours. I advse you fly from Guangzhou to Xinjiang.
