Yes, you need a double entry visa if you will visit Taiwan in this middle. travel itinerary is reqired, possibly you are required one from travel agency in China. But if you can provide hotel reservations, you may also get chance to travel alone. except return ticket, you need to provide your original passport, one photo, one application form for China.

Thank you Ms.Miles for your Reply.

I am confused about what you mean by:

"travel itinerary is reqired, possibly you are required one from travel agency in China. But if you can provide hotel reservations, you may also get chance to travel alone. except return ticket"

I can provide hotel reservations for my first 5 nights. But after this I wish to travel at my own leisure. I want to explore China and I do not want to commit to a planned itinery.
Would this cause a problem with my application.

I am very unsure of what the itinery should contain..

Any suggestions would be appreciated.

Just provide your reservations for first 5 night. It is ok. If possible, prepare a self-made travel itinerary.
