It is almost impossible for your wife to change her single entry L visa into double entry L visa or multiple entry L visa. Your wife can try to apply for Temporary Residence Permit at the local Exit & Enter Department under Public Security Bureau, once she gets the Temporary Residence Permit, she can exit and enter mainland China for many times during its validity.
