1. Yes, the MTR works unitl 24:00, so you can take Hong Kong Airport Express(https://www.travelchinaguide.com/cityguides/hongkong/transportation/air-express.htm) from the airport to Tsing Yi, transfer to Tung Chung Line to Lai King, again transfer to Tusen Wan Line to Mong Kok, and walk to your hotel within 5 minutes.
2. You may just take Tusen Wan Line from Mong Kok to Central, transfer to Bus no. 15C to Victoria Peak. The Victoria Peak is free to enter.
3. from your hotel to Giant Buddha, you may take Tsuen wan Line from Mong Kok to Lai King, transfer to Tung Chung Line to Tung Chung, walk to the cable car station of Ngong Ping 360 to take the cable car to Giant Buddha. It costs around HKD100 to visit the Giant Buddha, including the admission fee and round-way transportation from your hotel.
