About:China Transit Visa

Hello,
I've Canadian passport and will be flying back to Canada from
Tokyo --> Beijing (PEK) stopover --> Canada
this Christmas and the stopover in PEK will give me about 7 hrs to go outside the airport and do some sightseeing with my family.
Do I need a transit VISA for this? Does it depend on the airport?

Yes, you need a transit visa if you go out of the airport. But you can also try to apply for one day stay permit from the Beijing Airport(https://www.travelchinaguide.com/cityguides/beijing/capital-airport.htm) then go to visit Beijing with your family, if the application is denied by the airport, you have to remain in the airport till the connection flight.
