To see the gain buddha and Polin Monastery, you can walk a little bit ti Jordan MTR Station from the hotel. Then take mtr to Lai King and then change to Tung Chung Line to Tung Chung Station. Get out from Exit B and walk 5 minutes to the Ngong Ping 360 cable. There is also bus from Tung Chung to Ngong Ping which is slower. The MTR fare is 15.5 from Jordan to Tung Chung. 107HKD round trup for Ngong Ping cable. nearly 20HKD per person if taking bus.
To the Peak: Walk to Tsim Sha Tsui MTR Station and take MTR to Central. Then walk to Peak Tram Lower Terminus and take peak tram up to the Peak. MTR is 8.5HKD and Peak Tram is 33HKD for round trip.
To Avenue of Star and watching Symphony of Light there, you can just walk. Just 3 minutes walking from Exit J of TST EAst MTR Station.
To Disneyland: Take MTR from Jordan or TST to Lai King first and then change to Tung CHung Ling to Sunny Bay. Change to Disney resort Line after that. The whole journey costs 18.5HKD.
