About:China Embassy in Thailand

Hello, I am a Canadian passport holder who is planning to apply for a Chinese Visa in Bangkok.

I am hoping to visit China sometime in the next few months, but I do not know the exact time period when I'll be there, and have not booked a tour or accommodations yet. Will I need to know all this before applying for the Chinese Tourist visa?

Also, is there an 'interview process' involved during application? If so, what does the interview entail?

There is not an 'interview process' involved during application.

You need to make a plan for your travel to China(https://www.travelchinaguide.com/) A single-entry China visa is only valid for 3 months, you can apply for it at least one month before your trip. If you apply for a Chinese Tourist Visa in Bangkok, maybe the visa officer will asks you to provide round-trip flight tickets and hotel booking in China.
