Hi. I am a Malaysian citizen flying to Hong Kong with my family for a holiday. If i want to visit Shenzen for a day, can I apply for a visa at the land border (friend suggested we drive into Shenzen) or must I apply beforehand at a Chinese Embassy?

TQ in advance

yes, it is possible for you to get a China visa on arrival(https://www.travelchinaguide.com/embassy/visa/service.htm) at the land border of Shenzhen for one day visit. If you can't get the visa on arrival, it is also possible for you to get a visa in Hong Kong.
