I think Tsim Sha Tsui area is better to stay, for it is close to Hung Hom rain station to Shenzhen, and China Ferry Terminal to Macau. I've read some Indian restaurants in Hong Kong(https://www.travelchinaguide.com/cityguides/hongkong/dining/indian-restaurants.htm) in this page. Suggest hotel and places to visit in Hong Kong? About Hong Kong hotels The Salisbury -YMCA, Shamrock hotel are all well located, but I have no idea about your budget. So, you may check on your own. I recommend to see Victoria Peak, Ngong Ping Giant Buddha, Wong Tai Sin Temple, Repulse Bay and Stanley Market. Stay close to a metro station. It makes your travel by public transportation easier.
