You CANNOT apply for the visa by post. You must either visit the Chinese Visa Service Centre in person or have a friend or agent do it for you. Address: Ground Floor, 570 ST Kilda Rd., Melbourne, VIC 3004, If you need an agent I suggest asking a a travel agent which services the local Chinese population (sorry I only know Sydney. There is no system of appointments.

The normal service is 5 days so you should not have any problem. However, if you want a quicker service it is available for a fee.

You need a visa to visit China from Chinese Visa Application Service Center in Melbourne. They accept applications by post, and of course you need to pay additional service fee. If time is limit, you'd better make an appointment first from their website and submit your visa application to the center in person.
