You'd better apply for China visa in Australia, the China embassy/consulate in Italy ask applicants who are not Italian passport holders to present Italian residence permit or work permit. A single-entry China tourist visa is valid for 3 months, you can get it in Australia, then go to Italy, please arrange your trip carefully, otherwise, China visa expires before you use it.
